When you buy meat (pork, beef) it needs some time to rest in cold dark dry place (otherwise it will be as hard as your shoes). Problem is dry, because meat is full of water and blood, which has to go out. This rest allows you to have meat in your fridge for few days (pork 5-7 days, beef 14 days) and stay dry.
