3rd and final iteration. This probes well with a 27mm Piezo, set your z offset to somewhere around 0.1/0.05mm depending on your print settings, probe speed between 10 and 20 mms should work fine.

New version posted, it should be somewhat stiffer, and allows for much faster printing by sshaving a lot of unneccessary material. That includes the fan. My design was meh at best. For the moment I'm enjoying this one:
