It is very important to use fresh, cold water, and freshly ground espresso roast coffee. A lighter roast will not do. Kona coffee is not even acceptable for drip. Heat your portafilter and shot glasses prior to pulling the shots and tamp the coffee into a "puck" with 30 pounds of pressure.
