Tofu press

We have been trying some tofu lately but find the 'firm silken' tofu isn't firm enough for some of the things we have tried to make.
So this little press has been put together to help squeeze some of the liquid out.

I usually assemble on a plate in the fridge with a bottle of water to add some weight. After few hours the tofu has been gently pressed to about 80% of it's original size, just firm enough to slice and fry.
