Michetta (or ‘Rosetta’ in the rest of Italy) is the typical bread of Milan; it is a special ‘puffed bread’ because it is crispy on the surface but soft and HOLLOW inside, due to the special processing and the typical mould used to form the loaves. this is a faithful reproduction of the original Michette mould; for simplicity's sake, the tool is moulded in two parts; these are joined either by interlocking or with a glue line. it is advisable to mould this tool with food-grade plastics (PLA?
