I used 1/4'x20x4' carriage bolt (short version) and 1/4'x20x6' carriage bolt (long version) with a 1/4'x1' fender washer and a 1/4'x20 nylon stop nut. Once fully assembled I'll likely use a Dremel or sander to flatten one side of the bolt to make it easier for the chuck of the drill to grab the bolt.
Really liked Vader's Spool Winder, but needed to make a few changes to make it work for me.
1. Separated the shapes into different parts instead of all parts in one STL
2. Using the comments on Vader's, slightly increased the size of the Nut (3%) to fit a bit better.
3. Increased the size of the hole on the end to accommodate 1/4 x 20 carriage bolts (a US imperial measurement standard), but it should work fine with M7 bolts too.
