WaveShare esp32-s3-touchscreen-7" housing

This is not the most common display used for home assistent/esphome etc, but I picked a couple of these 1.2 version variants. The code is largely based on this https://github.com/charrus/Waveshare-ESP32-Sci-fi-dashboard in case anyone is struggling. I am doing some final cleanup on the esphome code and if there is interest I will share a link to the github files once I have it ready.
